Pork Loin Roast with Cold Mustard Sauce (Harry)

3 lbs pork loin roast with bone (remove fat)

Rub roast with:
1/2 tsp. garlic powder
1/2 tsp. dry mustard
1 tsp. thyme

Place in roaster with:
1 medium carrot sliced 1/4 thick
1 zucchini sliced
1/2 c. chopped leeks or onions
1 stalk celery
2 c. beef stock

Bake 1 1/2 hours at 350˚.

Serve with cold mustard sauce.

Mustard Sauce
Mix and chill:
1/4 c. dijon mustard
1/4 c. lemon juice
2 tsp. soya sauce
1 tsp. salt
1 tsp. pepper
2 cloves crushed garlic.
